Culinary Lesson with Chef Olivier - (post by Thurston Page--coming soon!)

Today we were lucky enough to meet the chef of the school, Chef Olivier. I also was able to interview him to find out why he became a chef, which dishes are his favorite to cook and how he came to work for this school. Before the interview, he taught us how to cook galettes and crêpes. Galettes are made with buckwheat flour and salt while crêpes are made with regular flour and some sugar. In a galette, you could put anything: fish, ham, chicken, cheese, etc. The same is true for a crêpe, but most people just fill them with more sugary items.

After Chef Olivier taught us how to make galettes and crêpes, and after the interview (I’ll share his responses at the travel fair), we started cooking. We were split into two groups; those who wanted to help make galettes with the chef went one way, and those who wanted to make crêpes went the other. I made a crêpe that consisted of chocolate and pears, while most people made crêpes with just chocolate. Then my group switched to help the chef make galettes. After he cooked the galettes, we would fill them with ham and cheese. They were very good.

After we finished the cooking lesson, the chef showed us where the little kids eat lunch. It was very cute because the chairs were so small. I couldn’t even fit my knees under the tables. After the tour, our class gave Chef Olivier and his assistant chef, Kevin, a thank you gift for letting us cook in their kitchen.

After our cooking workshop, we went back to the CDI to work on on our journals. Since the French kids have a half day every Wednesday, we were able to leave school early at 12:30 p.m. to return to our French homes. Most of us went shopping while others stayed at home. Today was a really fun day with a great activity.
